Basic Breakdown: Coconut water comes only from green coconuts - roughly one coconut yields an 11-ounce serving of the water. Most of the green coconuts used for this product are harvested from Brazil at about 7 months old while the water is still fat-free . As each coconut ages and turns brown (like the kind we see in grocery stores) the water turns to hardened "meat"; at this stage the meat can be used to extract creamy (but fatty) coconut milk.
