My Mom makes the BEST scrambled eggs. She uses fresh eggs from her European chickens that live in a coop-palace wedged between the lower and upper sections of our vineyard. Farm fresh eggs are rather ordinary but since these eggs come from hens that spend their days gazing out at rows of lush Syrah vines I like to call them vineyard fresh eggs...not so ordinary.



Now back to the eggs...

These scrambled eggs are country with a fancy finish. My mother whips them up in a pre-heated black skillet (the country part) and when they are almost done she sprinkles in chopped scallions (from her garden) and shaved Parmesan cheese. Right before she serves them she drizzles a bit of black truffle oil over the top (the fancy part). These eggs are hands down, the BEST eggs...ever. They are fluffy and rich with a bit of earthiness from the truffle oil. Serve them with your favorite toast for scooping. Simple and rustic...so perfect.
