I compare all veggie burgers to the one made by Hillstone Restaurant Group. They absolutely nail it. It is perfection as far as flavor and texture are concerned and I usually ask for a side of their hangman sauce (sort of a russian/thousand island) and a side of coleslaw and I'm in heaven.
This recipe is the closest I've gotten to replicating the Hillstone Veggie Burger at home aside from the fact that I didn't add prunes or oat bran, two ingredients that are definitely included in their version. I added dates to mine, which I prefer over prunes anyways ;)
Super Tasty Veggie Burger
makes 3 patties
Ingredients
1/2 cup brown rice, cooked
1 brown onion, small diced
3 red beets, peeled and small diced
3 garlic cloves, minced
2 Tbsp apple cider vinegar
1/4 cup dates, small diced
1 can black beans, drained and rinsed
1 Tbsp soy sauce
1/2 lemon, juiced
1 Tbsp oil (grapeseed or canola)
2 Tbsp chopped cilantro
1 tsp coriander
2 Tbsp AP flour
kosher salt, to taste
black pepper, to taste
1 slice jack or sharp cheddar cheese (optional)
Method
1. Heat 1 tbsp oil in saute pan. Add onions and beets and cook until onions are caramelized and beets are softened. 2. Add garlic and cook another minute until fragrant.
3. Deglaze with vinegar.
4. Add soy sauce, lemon juice, black beans, cilantro, coriander and flour.
5. Salt and Pepper to taste.
6. Remove from heat and add cooked brown rice.
7. Mix well and mash up a bit but not too much - you want a cohesive mixture that still has texture.
8. Once cooled, form into patties and refrigerate for at least hour to firm them up.
9. You can heat them on a grill or in a pan with some oil and you will basically be cooking them just a few minutes on each side to crisp up and brown the outside and heat the inside through. Melt cheese on just before serving with your favorite burger buns and accouterments.
