If Popeye were a foodie, this is what he'd drink. 

I've been lusting for a juicer for over a year and last week I found one at Costco for $89.99.  It was a Jack LaLanne Juicer ; sort of 90's looking but it had solid ratings,  and a lifetime guarantee. Sold. 


I  took it home and started experimenting. 

My Goal: 

I wanted to figure out a way to make a delicious, low glycemic, and nutrient rich green juice. The most important thing was that it had to be delicious. I mean, truly tasty, not just, nutritionally speaking, "good for you". I started scouring recipes and come to find out, there are tons of them out there - even Martha Stewart has a green juice recipe. 

 The chef in me knew there needed to be layers of flavor and high quality ingredients involved for it to be a positive experience. I tasted as I juiced; mixing and matching all sorts of greens. Here is the recipe for the winning combination.

Green Juice 
makes 4 cups 


Ingredients 
2 cucumbers 
12 oz bag of baby spinach
2 celery stalks 
1 inch piece of ginger 
1/2 lemon
16 oz unsweetened coconut water 

Method 
1. Chill all ingredients (this juice tastes best nice and cold)
2. Juice cucumbers, spinach, and ginger (should be 2 cups of juice)
3. Squeeze Lemon Juice into the mixture 
4. Add 16 oz coconut water 
5. Enjoy!
