Summer Peach & Ricotta Salad
This salad is bright and fresh - exactly what you want during the summer months.
Sweet summer peaches, creamy ricotta cheese, salty pistachios, baby greens, and honey vinaigrette create the perfect combination of taste and texture.
Handmade ricotta is always preferred over store-bought (click here to read my post on making your own) but in pinch, store-bought will, of course, get the job done.
Honey Vinaigrette
Ingredients
2 T honey
3 oz white balsamic vinegar
6 oz olive or your favorite salad oil
salt
pepper
Method
1. whisk honey and vinegar together until dissolved
2. slowly whisk in oil
3. season with salt and pepper
This peachy salad works best when you individually plate each one versus tossing all the ingredients together in a big bowl. First, spoon a bit of ricotta onto each plate and then top with baby greens and peach slices that you have tossed in the dressing. Sprinkle with roughly chopped pistachios. Finish with freshly cracked pepper. Enjoy.
