Green Goddess Dressing
Most evenings my go-to salad dressing is a simple vinaigrette ..you know...smidge of dijon....vinegar...squeeze of lemon...bit of honey...sometimes a tad of chopped shallot...salt...pepper...oil.
On other evenings that are not in the "most" category, I like to change things up a bit. Last night I made a green goddess dressing with fresh basil from my garden and a bunch of organic green onions that I picked up at the store.

Green Goddess Dressing
Ingredients
1/2 c mayonnaise
1/2 c sour cream
8 green onions (white and green parts)
1 lemon, juiced
handful of fresh basil leaves
squeeze of anchovy paste
dash or two of tabasco
salt and pepper, to taste
Method
1. Add all ingredients into your food processor and blend thoroughly*
2. chill and serve
*If you don't own a food processor, chop up the herbs and onions finely and whisk together with the remaining ingredients
Once you've got the dressing made, the salad itself is super simple: pick your lettuce of choice (bibb, butter, iceberg, romaine..etc) and top with a couple of sweet grape tomatoes, green goddess dressing, and some freshly cracked pepper.
