Mama Ro's Sweet Corn Salad

This is my mom's go-to recipe for summer parties and bbqs. The dressing is mayo-free which means you don't have to worry about time/temperature constraints and it reaches peak flavor at room temperature unlike most salads that need to be served chilled.  


The salad is coated in a smokey cilantro lime vinaigrette that super light and refreshing. For the dressing you will need a large bunch of fresh cilantro, 1 lime, 1 heaping Tbsp of cumin, 1 cup of oil (your choice), 1/3 cup of red wine vinegar, a squeeze of honey, and salt and pepper to taste. Pop everything into a blender or food processor and mix until it is well-combined. Chill the dressing while you make the salad. 


For the salad you will need 8-10 ears of sweet corn, cleaned, and coated in olive oil, salt, and pepper. Grill the corn out on your bbq until the edges are beginning to char (about 10 mins). Remove and let cool.  Once cooled, cut the corn from the cob and place into a large serving bowl.


 Next shave one red onion (paper thin) into the bowl, along with 3 chopped on-the-vine red tomatoes (seeds removed), 6 oz of your favorite feta cheese (crumbled), and a handful of cilantro leaves (whole).  



Toss the salad gently with the dressing and serve.
