Day 97

Today we made Tuiles and Souffles. Tuiles are thin crispy sweet (or savory) wafers made of dough (or cheese) that can be used as little serving vessels or garnishes. They are named for and curved like the tuiles, or tiles, that line the rooftops of French country homes, particularly those in Provence. 





Souffles can be sweet or savory as well. The word souffle is the past participle of the French verb souffler which means "to blow up" or more loosely "puff up". All souffles have two basic things: a cream base and beaten egg whites. I decided to make a bittersweet chocolate souffle with fresh orange zest and orange liquor.  I love the combination of dark chocolate and orange - one of my all-time favorites for sure.
