Day 94
We finished our bittersweet chocolate mousse cake today with a chocolate glacage which is basically a chocolate ganache-like icing with gelatin in it to give it a super shiny finish. We also practiced writing in chocolate - it had been a long time since I last used my cursive writing skills, let alone with a paper cone full of melted chocolate. We finished the day by making ladyfingers (sponge cake biscuits) in preparation for the tiramisu that we will construct tomorrow.
