Day 89

Today was day one of a two day exam. We were assigned to produce one blueberry pie with flaky crust and lattice top, lemon curd tarts with short dough crust and swiss meringue topping, and bittersweet chocolate ganache topped eclairs filled with pastry cream and creme chantilly. I was able to get most of my items prepped or baked and ready for finishing touches tomorrow before grading.  

Robert Frost loved blueberries so much that he wrote a poem about them.

"... You ought to have seen how it looked in the rain, 

The fruit mixed with water in layers of leaves, 

Like two kinds of jewels, a vision for thieves."
