Day 100

Today was our last day in Baking and Pastry (aside from a day of deep cleaning that will take place tomorrow) and all of our final dishes were presented for grading. Before presenting the desserts I baked off some cinnamon apple muffins topped with almond oatmeal streusel. 



Next I presented my Dulce De Leche Chiffon Cake with simple buttercream icing and bittersweet chocolate garnish. 



After that it was time for the vanilla bean creme brulee with fresh strawberry garnish.  


My final dish was a classic New York Cheesecake with graham cracker crust,  earl grey tuile, raspberry puree, and passion fruit sauce. 


We will take next week off for spring break before returning for our final 6 weeks of class in CAC (Cuisine Across Cultures)....can't wait.
