Blood Orange Margarita

Sarah Simmsfood, recipes
As I increased the incline percentage on my treadmill at the gym this afternoon I thought about the bowl full of blood oranges sitting on my counter at home. Most people probably don't spend their time at the gym thinking about food...but I sure do. Rerun episodes of Bravo's Top Chef always seem to be on while I am working out so I watch food, think about food, and try to forget how much my butt and thighs are burning. Back to the Blood Oranges. I made a delicious vinaigrette with them a few days ago. I  used them in a pork brine too. I love the flavor and color...just gorgeous. Somewhere between my warm-up mile and cool-down stretches I decided I would use them for margaritas when I got home.

Blood Orange Margarita

Ingredients
2 oz of your Favorite Tequila
Splash of Orange Liquor
Juice of 2 limes
Juice of 1 blood orange
Kosher salt

Method
1. Wet the rim of your glass with a wedge of blood orange and place rim in a shallow dish of kosher salt (the blood orange juice turns the salt a beautiful shade of fuchsia pink)
2. Fill glass with ice.  Pour in ingredients. Mix well.
3. ENJOY.

*NOTE: I love my margaritas sour but if that isn't your cup of tea then go ahead and add a bit of sugar
