Strawberry & Peach Crumble

I watched Giada [de Laurentiis] make a variation of this on the Food Network the other day and it inspired me big time. Strawberries are just coming back into season and I'll be honest, the peaches weren't quite ripe yet but nothing could stop me from buying them. This dessert is so simple and effortless that I had to share it. All you do is cut up a couple of peaches and a carton of strawberries, toss them in a bowl with a bit of fresh lemon juice and brown sugar, and set aside.  In another bowl you make the crumble. I used flour, a stick of butter, oatmeal, crushed almonds, crushed amaretti cookies (I had some on hand and thought, "why not"), and brown sugar. You cut the butter up   while its cold and mix it in with you hands until the mixture is in little chunks the size of peas. You could do this part in a food processor but it is just as easily done with your hands. Pour the fruit mixture into a baking dish and top with crumble. Bake at 350 degrees for 40 minutes until golden brown and bubbly on top. Serve with fresh whipped cream or ice cream - I served mine with Häagen-Dazs Vanilla Bean Frozen Yogurt.  It was the perfect combination of cold sweetness and warm tartness (oh those peaches). The best thing about this dessert is that you can get creative with the fruit and the crumble - use whatever you've got on hand!
