Day 62

Today was so so busy and borderline overwhelming which was... surprisingly fun.   

We had a specific time frame to produce and present two complete dishes. My first dish utilized the sweetbreads that I had poached and prepped yesterday.  I pan-fried the sweetbreads after coating them in a bit of curry and panko bread crumbs.  They were served over risotto with a green pea pesto and maltaise sauce (hollandaise infused with fresh blood orange juice and zest). I garnished the dish with fresh blood orange segments. 


The second dish was stewed rabbit served over hand-rolled pappardelle pasta topped sauteed shitake mushrooms and fresh parsley. 


The rabbit was to-die-for delicious. Loved it.
