We had two exams today covering both the history of french cuisine and kitchen sanitation.
The history of Le Cordon Bleu is more simple that you might think.
The Order of The Holy Spirit was the most exclusive order in France until 1789. Members were awarded with the cross of the Holy Spirit which hung from a blue ribbon around their necks. They became known as the Cordon Bleus [meaning blue ribbons]. The sumptuous banquets accompanying their award ceremonies became legendary. The rest was history, literally.
