We made mayonnaise today and I was introduced to something new - a finger lime.
When it comes to mayo you only need a few simple ingredients and the rest is all in the wrist!
Step 1: Put one egg yolk in a mixing bowl.
Step 2: Add 3/4 tsp white wine vinegar, a pinch of salt, and 1/4 (rounded) tsp of dijon mustard
Step 3: Whisk ingredients together in bowl and then SLOWLY add 6-8 oz of oil
Note: If you break your mayo and mess up the emulsification process there are two ways to fix it - stop whisking (as no amount of whisking will bring your mayo back!) and immediately and try one of these two things:
[A.] Get a new egg yolk and slowly add your "broken" mayo into fresh bowl whisking fiercely.
[B.] Add a flick of water into a fresh bowl and add "broken" mayo slowly into water whisking fiercely.
Homemade mayonnaise...nothing beats it.
Now back to the finger lime...the caviar of citrus!
The finger lime plant is a small thorny shrub that grows in the lowland subtropical rainforest and the dry rainforest on the coastal regions of Queensland and New South Wales, Australia. There are different colored varieties : red, orange, yellow, green, purple, black and brown. They cost about $50 per pint and are about the size of half your pinky finger. When you cut one in half you can suck or squeeze out these amazing little roe-like beads that pop in your mouth and taste of bright tangy citrus notes...magical.
