Arugula Salad
I adore the simple pleasure that can be found in salad of arugula, shaved Parmesan, and fresh cracked peppercorns. Serve it with a vinaigrette - red wine vinegar, Dijon, olive oil, salt, pepper, and a squeeze of lemon. If you have a complex or heavy/rich entree this salad is ideal for finding that much sought-after "balance" in your meal.
Today I spent a few hours making tomato sauce and meatballs from scratch and at the last minute I threw together this salad to serve alongside the main event:
Everyone (well, all 4 of my dinner guests) commented on how much they loved it.

Arugula also known as "rocket" (pick up a leaf and turn it horizontal and you will notice that the leaves look like flames coming out of a rocket) is an exceptionally strong, leafy green that tastes peppery and rich. Look for it in your local grocery store ...so tasty.
