Watermelon and Feta Salad
This recipe is wonderful...so refreshing and light! You will love the perfect balance found between the sweet watermelon, sharp red onion, creamy feta cheese, and peppery arugula. Simply delicious. I used champagne vinegar in my dressing but you can use whatever you like (IE balsamic, wine white, or apple cider vinegar).
Watermelon and Feta Salad
Serves 4
Ingredients:
2 tablespoons champagne vinegar
2 tablespoons olive oil
Coarse salt and ground pepper
3 bunches arugula (about 12 ounces total), thick stems removed
1/4 medium red onion, thinly sliced
1 1/2-pound piece chilled seedless watermelon, rind removed, cut into small chunks (2 to 3 cups)
4 ounces feta cheese, crumbled
Method:
1.In a small bowl, whisk together vinegar and oil.
2.Season with salt and pepper.
3.In a large bowl, combine arugula and onion
4.Toss with dressing to taste.
5.Gently toss with watermelon and feta, and serve.
